  1. Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or foil.
  2. Pat the shrimp thoroughly dry with paper towels and place them in a large mixing bowl.
  3. In a small bowl, whisk together the melted butter, minced garlic, lemon juice, oregano, and red pepper flakes.
  4. Pour the garlic butter mixture over the shrimp and toss until every piece is evenly coated.
  5. Sprinkle the Kosher salt and black pepper over the mixture and toss again briefly. Spread the shrimp in a single, non-crowded layer on the prepared baking sheet.
  6. Place the tray in the hot oven and roast for 6–7 minutes.
  7. Carefully remove the pan and sprinkle the grated Parmesan cheese evenly over the top of the shrimp.
  8. Return to the oven and roast for another 3–5 minutes, until the shrimp are pink and opaque and the cheese is melted and lightly golden. Watch carefully to avoid burning.
  9. Remove from the oven immediately, sprinkle with fresh parsley, and serve hot.
