Instructions:
- Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or foil.
- Pat the shrimp thoroughly dry with paper towels and place them in a large mixing bowl.
- In a small bowl, whisk together the melted butter, minced garlic, lemon juice, oregano, and red pepper flakes.
- Pour the garlic butter mixture over the shrimp and toss until every piece is evenly coated.
- Sprinkle the Kosher salt and black pepper over the mixture and toss again briefly. Spread the shrimp in a single, non-crowded layer on the prepared baking sheet.
- Place the tray in the hot oven and roast for 6–7 minutes.
- Carefully remove the pan and sprinkle the grated Parmesan cheese evenly over the top of the shrimp.
- Return to the oven and roast for another 3–5 minutes, until the shrimp are pink and opaque and the cheese is melted and lightly golden. Watch carefully to avoid burning.
- Remove from the oven immediately, sprinkle with fresh parsley, and serve hot.
