Ingredients:
- 1 box (15.25 oz) spice cake mix
- 1 can (15 oz) pumpkin puree
- 1 tsp ground cinnamon
Instructions:
- Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the spice cake mix, pumpkin puree, and ground cinnamon. Stir with a spatula until the powder is fully incorporated and the batter is smooth.
- Line a baking sheet with parchment paper. Using a cookie scoop, drop rounded mounds of dough roughly 2 inches apart. Lightly press the tops with a fork or the back of a spoon to flatten them slightly.
- Bake for 10–12 minutes until the edges are set and the tops spring back slightly when touched. Remove from the oven as soon as they look matte to ensure they remain soft.
