Ingredients:

  • 2 cups cooked rice, white or brown
  • 2 cups cooked chicken, shredded or diced
  • 2 cups broccoli florets, steamed or boiled
  • 1 can condensed cream of chicken soup
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese, divided
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (Panko recommended)
  • 2 tablespoons melted unsalted butter

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a large bowl, combine cooked rice, chicken, broccoli, cream of chicken soup, milk, half of the cheddar cheese, garlic powder, salt, and pepper.
  3. Pour the mixture into the prepared baking dish.
  4. In a small bowl, combine breadcrumbs and melted butter. Sprinkle over the casserole.
  5. Top with the remaining cheddar cheese.
  6. Bake for 30-35 minutes, or until golden brown and bubbly.
