Instructions:
- Prepare the Crust: Combine graham cracker crumbs, 2 tablespoons of sugar, melted butter, and salt. Mix until it resembles wet sand.
- Form the Bases: Press about 1 heaping teaspoon of the crust mixture firmly into the bottom of each silicone liner/cup. Place liners on a small tray and chill in the freezer for 15 minutes.
- Mix the Filling: Beat the softened cream cheese and 1/3 cup of sugar until completely smooth. Beat in the egg yolk, vanilla extract, and lemon juice until just combined. Do not overmix.
- Assemble the Bites: Spoon the cheesecake filling evenly over the chilled crusts, filling them about 3/4 full.
- Add the Swirl: Drop 1/2 teaspoon of strawberry jam onto the centre of each bite. Use a toothpick to gently swirl the jam into the batter.
- Chill Again: Return the filled bites (still in their liners on the tray) to the refrigerator for a minimum of 30 minutes to firm up properly.
- Air Fry: Preheat air fryer to 320°F (160°C). Arrange 4–6 chilled bites in the air fryer basket, ensuring space between them.
- Cook: Air fry for 10–12 minutes. The edges should look set and slightly golden, with only a slight wobble in the centre.
- Cool & Rest: Carefully remove the bites and let them cool completely on a wire rack before dusting with powdered sugar and garnishing with fresh diced strawberries, if desired.
