Instructions:
- Prepare the Chicken Mix: In a medium bowl, combine the shredded chicken, taco powder, cumin, salt, and pepper. Mix thoroughly until the chicken is evenly seasoned.
- Assemble the Quesadillas: Lay out the four tortillas. On half of each tortilla, layer about ¼ cup of the seasoned chicken mix, followed by a generous sprinkle of both cheeses and a pinch of diced red onion (if using). Fold the empty half over the filling to create a half-moon shape.
- Preheat the Air Fryer: Preheat the air fryer basket to 375°F (190°C) for 3 minutes.
- Brush/Spray Exterior: Lightly brush the top and bottom exterior of each assembled quesadilla with softened butter or spray generously with olive oil spray.
- Air Fry (First Batch): Carefully place 1 or 2 quesadillas in the air fryer basket, ensuring they do not overlap. Cook for 4–5 minutes.
- Flip and Finish: Carefully flip the quesadillas and cook for an additional 3–4 minutes, or until the exterior is deep golden brown and the cheese inside is thoroughly melted.
- Rest and Serve: Remove the quesadillas, let them rest on a cutting board for 1 minute, then slice each into two or three wedges. Repeat steps 5 and 6 with any remaining quesadillas.
