Ingredients:

  • 4 large eggs (about 200g)
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon milk (or plant-based alternative) (15ml)
  • ¼ cup shredded cheese (e.g., cheddar, about 30g)
  • Fresh herbs (e.g., chives or parsley, finely chopped, about 2 tablespoons or 10g)
  • Cooked bacon or sausage bits (optional, about 30-50g)

Instructions:

  1. Preheat the air fryer to 270°F (130°C).
  2. Whisk the eggs, milk, salt, and pepper together in a mixing bowl until well combined and slightly frothy.
  3. Prepare muffin cups or ramekins: If using, lightly grease with cooking spray or butter.
  4. Distribute the egg mixture evenly into the muffin cups or ramekins. If desired, add cheese, herbs, or meat bits.
  5. Place the cups in the air fryer basket.
  6. Cook for 8-10 minutes or until the eggs are set and lightly golden on top. Check for doneness by gently shaking—eggs should be slightly jiggly but firm at the edges.
  7. Remove the eggs from the air fryer and let cool for a minute before serving.
  8. Garnish with additional herbs if desired and serve warm.
