Ingredients:

  • 1 pound (454g) ground beef (80/20 blend recommended)
  • 1/2 pound (227g) ground pork
  • 1 cup (120g) breadcrumbs (Italian-style preferred, or panko)
  • 1/4 cup (30g) grated Parmesan cheese
  • 1/4 cup (60ml) whole milk
  • 2 large eggs, lightly beaten
  • 2 cloves garlic, minced
  • 1 tablespoon dried Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh parsley (Optional)

Instructions:

  1. In a large bowl, gently combine ground beef, ground pork, breadcrumbs, Parmesan cheese, milk, eggs, garlic, Italian seasoning, salt, pepper, and parsley (if using). Don't overmix – that leads to tough meatballs.
  2. Using your hands (dampened with water to prevent sticking), roll the mixture into approximately 1-inch meatballs.
  3. Preheat your air fryer to 375°F (190°C). Preheating is key for even cooking.
  4. Arrange the meatballs in a single layer in the air fryer basket. Don't overcrowd the basket – work in batches if necessary. Air fry for 12-15 minutes, flipping halfway through, or until the meatballs are cooked through and golden brown and the internal temperature reaches 165°F (74°C). Use a meat thermometer to be absolutely sure.
  5. Remove the meatballs from the air fryer and serve immediately.
