Ingredients:
- 1 pound (454g) ground beef (80/20 blend recommended)
- 1/2 pound (227g) ground pork
- 1 cup (120g) breadcrumbs (Italian-style preferred, or panko)
- 1/4 cup (30g) grated Parmesan cheese
- 1/4 cup (60ml) whole milk
- 2 large eggs, lightly beaten
- 2 cloves garlic, minced
- 1 tablespoon dried Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped fresh parsley (Optional)
Instructions:
- In a large bowl, gently combine ground beef, ground pork, breadcrumbs, Parmesan cheese, milk, eggs, garlic, Italian seasoning, salt, pepper, and parsley (if using). Don't overmix – that leads to tough meatballs.
- Using your hands (dampened with water to prevent sticking), roll the mixture into approximately 1-inch meatballs.
- Preheat your air fryer to 375°F (190°C). Preheating is key for even cooking.
- Arrange the meatballs in a single layer in the air fryer basket. Don't overcrowd the basket – work in batches if necessary. Air fry for 12-15 minutes, flipping halfway through, or until the meatballs are cooked through and golden brown and the internal temperature reaches 165°F (74°C). Use a meat thermometer to be absolutely sure.
- Remove the meatballs from the air fryer and serve immediately.
