Ingredients:

  • 1 pound (450g) boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon (15ml) olive oil
  • 1 teaspoon (5g) garlic powder
  • ½ teaspoon (2.5g) onion powder
  • ½ teaspoon (2.5g) paprika
  • ¼ teaspoon (1.25g) salt
  • ¼ teaspoon (1.25g) black pepper
  • ½ cup (60g) panko breadcrumbs
  • 2 tablespoons (20g) grated Parmesan cheese
  • 2 tablespoons (14g) dry ranch dressing mix (from a packet)

Instructions:

  1. Cube chicken into even sizes. Toss with olive oil, garlic powder, onion powder, paprika, salt, and pepper. Ensure chicken pieces are evenly coated.
  2. In a separate bowl, combine panko breadcrumbs, Parmesan cheese, and dry ranch dressing mix. Mix well to combine.
  3. Dip each piece of chicken into the ranch breadcrumb mixture, pressing lightly to ensure the crumbs adhere. Make sure each piece is well coated.
  4. Preheat air fryer to 400°F (200°C). Place chicken bites in a single layer in the air fryer basket, making sure they aren't overcrowded. Cook for 5-7 minutes, flipping halfway through, or until chicken is cooked through and golden brown. The internal temperature should reach 165°F (74°C).
  5. Remove from air fryer and serve immediately.
