Ingredients:
- 1 pound (450g) boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 tablespoon (15ml) olive oil
- 1 teaspoon (5g) garlic powder
- ½ teaspoon (2.5g) onion powder
- ½ teaspoon (2.5g) paprika
- ¼ teaspoon (1.25g) salt
- ¼ teaspoon (1.25g) black pepper
- ½ cup (60g) panko breadcrumbs
- 2 tablespoons (20g) grated Parmesan cheese
- 2 tablespoons (14g) dry ranch dressing mix (from a packet)
Instructions:
- Cube chicken into even sizes. Toss with olive oil, garlic powder, onion powder, paprika, salt, and pepper. Ensure chicken pieces are evenly coated.
- In a separate bowl, combine panko breadcrumbs, Parmesan cheese, and dry ranch dressing mix. Mix well to combine.
- Dip each piece of chicken into the ranch breadcrumb mixture, pressing lightly to ensure the crumbs adhere. Make sure each piece is well coated.
- Preheat air fryer to 400°F (200°C). Place chicken bites in a single layer in the air fryer basket, making sure they aren't overcrowded. Cook for 5-7 minutes, flipping halfway through, or until chicken is cooked through and golden brown. The internal temperature should reach 165°F (74°C).
- Remove from air fryer and serve immediately.
