Ingredients:
- 3 very ripe bananas, mashed (about 1 1/2 cups / 340g)
- 1/2 cup (1 stick / 113g) unsalted butter, melted
- 3/4 cup (150g) granulated sugar
- 1/4 cup (50g) packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup (60ml) pineapple juice
- 1 3/4 cups (210g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup (75g) crushed pineapple, well-drained
- 1/2 cup (50g) shredded coconut, sweetened or unsweetened
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, mash the ripe bananas until smooth.
- Stir in the melted butter, granulated sugar, brown sugar, eggs, vanilla extract, and pineapple juice into the mashed bananas. Whisk until well combined.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix!
- Gently fold in the drained crushed pineapple and shredded coconut.
- Pour the batter into the prepared loaf pan. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
