Ingredients:

  • 4 medium apples (Granny Smith, Honeycrisp, or a mix), peeled, cored, and diced (about 4 cups) (approx. 500g)
  • 2 tablespoons unsalted butter (28g)
  • 1/4 cup granulated sugar (50g)
  • 2 tablespoons brown sugar, packed (30g)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1 tablespoon lemon juice
  • 3 cups all-purpose flour (360g)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar (200g)
  • 1/2 cup vegetable oil (120ml)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk (240ml)
  • 1 cup powdered sugar (120g)
  • 2-3 tablespoons milk (30-45ml)

Instructions:

  1. Melt butter in a large skillet over medium heat. Add diced apples, sugars, spices, and lemon juice. Cook, stirring occasionally, until apples are softened but still slightly firm, about 8-10 minutes. Let cool slightly.
  2. Preheat oven to 350°F (175°C). Grease and flour the loaf pan. In a large bowl, whisk together flour, baking soda, and salt. In a separate bowl, whisk together sugar, oil, eggs, and vanilla extract.
  3. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
  4. Pour half of the batter into the prepared loaf pan. Spoon the apple filling evenly over the batter. Pour the remaining batter over the apple filling.
  5. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  6. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. While the bread is cooling, prepare the glaze by whisking together powdered sugar, milk, and vanilla extract until smooth. Add more milk as needed to reach desired consistency.
  7. Drizzle the glaze over the cooled bread. Slice and serve.
