Ingredients:
- 2 medium apples (such as Honeycrisp or Granny Smith), peeled, cored, and diced (about 2 cups) (280g)
- 2 tablespoons unsalted butter (28g)
- 1/4 cup packed light brown sugar (50g)
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 cups all-purpose flour (240g)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup granulated sugar (100g)
- 1/2 cup packed light brown sugar (100g)
- 1/2 cup vegetable oil (120ml)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk (240ml)
- 2 cups powdered sugar (240g)
- 3-4 tablespoons milk (45-60ml)
- 1/2 teaspoon vanilla extract
Instructions:
- Melt butter in a saucepan, add apples, brown sugar, cinnamon, and nutmeg. Cook until apples are softened but still hold their shape. Let cool.
- Preheat oven to 350°F (175°C). Grease and flour the loaf pan.
- Whisk together flour, baking soda, and salt in a large bowl.
- In a separate bowl, combine granulated sugar, brown sugar, oil, eggs, and vanilla. Mix well.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
- Gently fold the cooled apple mixture into the batter.
- Pour batter into the prepared loaf pan. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Whisk together powdered sugar, milk, and vanilla extract until smooth. Add more milk, a teaspoon at a time, until desired consistency is reached.
- Drizzle the glaze over the cooled bread. Let the glaze set before slicing and serving.
