Ingredients:

  • 1/2 cup (45g) rolled oats
  • 2/3 cup (160ml) unsweetened almond milk
  • 1/4 cup (60g) plain non-fat Greek yogurt
  • 1 tablespoon (12g) chia seeds
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup (65g) fresh diced Honeycrisp or Granny Smith apple
  • 1/2 teaspoon ground cinnamon
  • 1 pinch ground nutmeg
  • 1 teaspoon maple syrup

Instructions:

  1. Dice your fresh Honeycrisp into 1/4 inch cubes until you have a heap of uniform, glistening pieces.
  2. Place the 1/2 cup rolled oats, 1 tablespoon chia seeds, and spices into your jar.
  3. In a separate small bowl or directly in the jar, stir the 2/3 cup almond milk, 1/4 cup Greek yogurt, vanilla, and maple syrup.
  4. Pour the liquid mixture over the dry ingredients.
  5. Stir with your spatula until no dry pockets of oats remain at the bottom.
  6. Add about two thirds of the diced apples into the mixture.
  7. Tighten the lid and place it in the fridge for at least 6 hours.
  8. Before eating, top with the remaining fresh apple for a vibrant, crunchy finish.
