Ingredients:
- 1/2 cup (45g) rolled oats
- 2/3 cup (160ml) unsweetened almond milk
- 1/4 cup (60g) plain non-fat Greek yogurt
- 1 tablespoon (12g) chia seeds
- 1/2 teaspoon pure vanilla extract
- 1/2 cup (65g) fresh diced Honeycrisp or Granny Smith apple
- 1/2 teaspoon ground cinnamon
- 1 pinch ground nutmeg
- 1 teaspoon maple syrup
Instructions:
- Dice your fresh Honeycrisp into 1/4 inch cubes until you have a heap of uniform, glistening pieces.
- Place the 1/2 cup rolled oats, 1 tablespoon chia seeds, and spices into your jar.
- In a separate small bowl or directly in the jar, stir the 2/3 cup almond milk, 1/4 cup Greek yogurt, vanilla, and maple syrup.
- Pour the liquid mixture over the dry ingredients.
- Stir with your spatula until no dry pockets of oats remain at the bottom.
- Add about two thirds of the diced apples into the mixture.
- Tighten the lid and place it in the fridge for at least 6 hours.
- Before eating, top with the remaining fresh apple for a vibrant, crunchy finish.
