Ingredients:
- 1.5 lbs (680g) boneless, skinless chicken breasts
- 1/2 cup (115g) mayonnaise
- 1/4 cup (60ml) plain Greek yogurt
- 2 tbsp (30ml) apple cider vinegar
- 1/2 tsp (2.5ml) Dijon mustard
- 1 cup (120g) Honeycrisp apple, diced
- 1/2 cup (50g) pecan halves, toasted and chopped
Instructions:
- If using raw chicken, season with salt and pepper and cook in a skillet over medium heat until cooked through (internal temperature of 165°F/74°C). Let cool slightly and then shred or dice. Or use pre-cooked chicken to save time.
- In a small bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, and Dijon mustard.
- In the large mixing bowl, combine the cooked chicken, diced apple, and chopped pecans.
- Pour the dressing over the chicken mixture and gently stir until everything is evenly coated.
- Cover and refrigerate for at least 15 minutes to allow the flavours to meld. This step is optional, but improves the flavour significantly.
- Serve as a sandwich filling, over a bed of lettuce, or with crackers.
