Ingredients:

  • 1.5 lbs (680g) boneless, skinless chicken breasts
  • 1/2 cup (115g) mayonnaise
  • 1/4 cup (60ml) plain Greek yogurt
  • 2 tbsp (30ml) apple cider vinegar
  • 1/2 tsp (2.5ml) Dijon mustard
  • 1 cup (120g) Honeycrisp apple, diced
  • 1/2 cup (50g) pecan halves, toasted and chopped

Instructions:

  1. If using raw chicken, season with salt and pepper and cook in a skillet over medium heat until cooked through (internal temperature of 165°F/74°C). Let cool slightly and then shred or dice. Or use pre-cooked chicken to save time.
  2. In a small bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, and Dijon mustard.
  3. In the large mixing bowl, combine the cooked chicken, diced apple, and chopped pecans.
  4. Pour the dressing over the chicken mixture and gently stir until everything is evenly coated.
  5. Cover and refrigerate for at least 15 minutes to allow the flavours to meld. This step is optional, but improves the flavour significantly.
  6. Serve as a sandwich filling, over a bed of lettuce, or with crackers.
