Ingredients:

  • 2 cups (57g) Fresh Arugula, loosely packed
  • ¼ cup (60 ml) Extra Virgin Olive Oil
  • 2 tablespoons (30 ml) Fresh Lemon Juice
  • 1 tablespoon (15 ml) Water
  • 1 teaspoon (5 ml) Honey or Maple Syrup (optional)
  • ½ teaspoon (2.5 ml) Dijon Mustard
  • ¼ teaspoon (1.25 ml) Salt, or to taste
  • ⅛ teaspoon (0.6 ml) Black Pepper, freshly ground, or to taste

Instructions:

  1. Place the arugula, olive oil, lemon juice, and water into a blender or food processor.
  2. Process until the mixture is smooth and creamy. Scrape down the sides as needed to ensure even blending.
  3. Add the honey (if using), Dijon mustard, salt, and pepper to the blender.
  4. Pulse a few times to incorporate the seasonings.
  5. Taste the dressing and adjust the seasoning as needed. Add more lemon juice for tanginess, honey for sweetness, salt and pepper to your taste.
  6. Transfer the dressing to an airtight container or jar and store in the refrigerator.
