Ingredients:
- 2 cups (57g) Fresh Arugula, loosely packed
- ¼ cup (60 ml) Extra Virgin Olive Oil
- 2 tablespoons (30 ml) Fresh Lemon Juice
- 1 tablespoon (15 ml) Water
- 1 teaspoon (5 ml) Honey or Maple Syrup (optional)
- ½ teaspoon (2.5 ml) Dijon Mustard
- ¼ teaspoon (1.25 ml) Salt, or to taste
- ⅛ teaspoon (0.6 ml) Black Pepper, freshly ground, or to taste
Instructions:
- Place the arugula, olive oil, lemon juice, and water into a blender or food processor.
- Process until the mixture is smooth and creamy. Scrape down the sides as needed to ensure even blending.
- Add the honey (if using), Dijon mustard, salt, and pepper to the blender.
- Pulse a few times to incorporate the seasonings.
- Taste the dressing and adjust the seasoning as needed. Add more lemon juice for tanginess, honey for sweetness, salt and pepper to your taste.
- Transfer the dressing to an airtight container or jar and store in the refrigerator.
