Ingredients:
- 2 cups apple cider
- 2 cups all-purpose flour
- 1 ½ tsp baking powder
- 1/4 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp apple pie spice
- 1/2 tsp fine sea salt
- 6 tbsp unsalted butter, melted and browned
- 3/4 cup brown sugar, packed
- 1 large egg, room temperature
- 1/4 cup buttermilk, room temperature
- 1 tsp vanilla extract
- 4 tbsp unsalted butter, melted (for coating)
- 1/2 cup granulated sugar (for coating)
- 1 tbsp ground cinnamon (for coating)
Instructions:
- Simmer 2 cups cider in a small saucepan over medium heat for about 20 minutes until reduced to exactly 1/2 cup. Note: This is the most important step for flavor.
- Whisk the all-purpose flour, baking powder, baking soda, 1 tsp cinnamon, apple pie spice, and sea salt in a large mixing bowl.
- In a separate bowl, whisk together the cooled cider concentrate, 6 tbsp melted brown butter, brown sugar, egg, buttermilk, and vanilla extract.
- Fold the wet ingredients into the dry ingredients using a spatula until just combined. Do not overmix.
- Pipe the batter into a greased donut pan and bake for 10-12 minutes at 350°F/175°C until golden brown.
- While warm, dip each donut into the 4 tbsp melted butter, then toss in a mixture of 1/2 cup granulated sugar and 1 tbsp cinnamon.
