Ingredients:
- 4 (6 oz) salmon fillets (about 170g each)
- 1/4 cup olive oil (60ml)
- 2 tablespoons fresh lemon juice (30ml)
- Zest of 1 lemon
- 3 tablespoons fresh dill, chopped (about 10g)
- 2 cloves garlic, minced
- Salt and pepper, to taste
- Lemon wedges, for serving
- Fresh dill sprigs, for serving
Instructions:
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, whisk together olive oil, lemon juice, lemon zest, dill, minced garlic, salt, and pepper.
- Place the salmon fillets in the baking dish and pour the marinade over them. Ensure they are well-coated and leave to marinate for about 10 minutes.
- Transfer the baking dish to the preheated oven. Bake for 15-20 minutes or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
- Remove from the oven, garnish with lemon wedges and fresh dill sprigs, and enjoy!
