Ingredients:

  • 4 (6 oz) salmon fillets (about 170g each)
  • 1/4 cup olive oil (60ml)
  • 2 tablespoons fresh lemon juice (30ml)
  • Zest of 1 lemon
  • 3 tablespoons fresh dill, chopped (about 10g)
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Lemon wedges, for serving
  • Fresh dill sprigs, for serving

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, whisk together olive oil, lemon juice, lemon zest, dill, minced garlic, salt, and pepper.
  3. Place the salmon fillets in the baking dish and pour the marinade over them. Ensure they are well-coated and leave to marinate for about 10 minutes.
  4. Transfer the baking dish to the preheated oven. Bake for 15-20 minutes or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  5. Remove from the oven, garnish with lemon wedges and fresh dill sprigs, and enjoy!
