Ingredients:
- 4 salmon fillets (about 6 ounces each; 170 g)
- 2 tablespoons olive oil (30 ml)
- Salt and pepper, to taste
- ½ cup unsalted butter, softened (115 g)
- Zest of 1 lemon
- 2 tablespoons fresh parsley, chopped (8 g)
- 2 tablespoons fresh dill, chopped (8 g)
- 1 tablespoon fresh chives, chopped (4 g)
- Juice of 1 lemon (about 2 tablespoons; 30 ml)
Instructions:
- Preheat your oven to 375°F (190°C).
- Pat the salmon fillets dry with a paper towel. Place them skin-side down in a greased baking dish. Drizzle with olive oil and season with salt and pepper.
- In a mixing bowl, combine softened butter, lemon zest, herbs, and lemon juice. Mix until smooth and well combined.
- Spread a generous amount of lemon herb butter over each salmon fillet.
- Place the baking dish in the preheated oven. Bake for 15-20 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
- Remove from the oven and spoon any remaining melted butter over the top. Serve immediately.
