Ingredients:
- 1 cup (120g) rolled oats (not instant)
- 1 cup (240ml) milk (dairy or non-dairy)
- 1 cup (225g) cottage cheese (small curd or large curd, drained if very watery)
- 2 ripe bananas, mashed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 tablespoon (15ml) unsalted butter, melted (or oil) for the griddle
Instructions:
- Combine oats and milk in a bowl. Let sit for 5 minutes to soften.
- Add cottage cheese, mashed bananas, eggs, and vanilla extract to the oatmeal mixture. Whisk until well combined, but don't overmix. A few lumps are fine.
- In a separate bowl, whisk together baking powder, baking soda, and salt. Add the dry ingredients to the wet ingredients. Gently fold until just combined.
- Heat a lightly oiled griddle or frying pan over medium heat.
- Pour 1/4 cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to form on the surface.
