Ingredients:

  • 1 cup (120g) rolled oats (not instant)
  • 1 cup (240ml) milk (dairy or non-dairy)
  • 1 cup (225g) cottage cheese (small curd or large curd, drained if very watery)
  • 2 ripe bananas, mashed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon (15ml) unsalted butter, melted (or oil) for the griddle

Instructions:

  1. Combine oats and milk in a bowl. Let sit for 5 minutes to soften.
  2. Add cottage cheese, mashed bananas, eggs, and vanilla extract to the oatmeal mixture. Whisk until well combined, but don't overmix. A few lumps are fine.
  3. In a separate bowl, whisk together baking powder, baking soda, and salt. Add the dry ingredients to the wet ingredients. Gently fold until just combined.
  4. Heat a lightly oiled griddle or frying pan over medium heat.
  5. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to form on the surface.
