Ingredients:

  • 2 Large Flatbreads (Naan or thin pizza crusts)
  • 1 tbsp Extra Virgin Olive Oil
  • 1/2 tsp Garlic Powder
  • 2 cups Cooked Chicken Breast, shredded or cubed
  • 1/2 cup BBQ Sauce
  • 2 tbsp Red Onion, thinly sliced
  • 1 cup Low-Moisture Mozzarella, shredded
  • 1/2 cup Smoked Gouda, shredded
  • 1/4 cup Fresh Cilantro, chopped
  • 1 tbsp Sliced Jalapeños (optional)

Instructions:

  1. Preheat your oven to 220°C. Place your empty baking tray inside while it heats so the flatbread hits a hot surface immediately.
  2. In a bowl, combine 2 cups chicken with 1/2 cup BBQ sauce. Note: Coating the chicken first prevents it from drying out in the high heat.
  3. Brush 1 tbsp olive oil over the top of 2 large flatbreads. Sprinkle evenly with 1/2 tsp garlic powder.
  4. Spread 1/2 cup of the mozzarella and 1/4 cup of the gouda across the two flatbreads.
  5. Distribute the sauced chicken evenly over the cheese.
  6. Add the remaining cheeses, 2 tbsp red onion, and 1 tbsp jalapeños if using.
  7. Slide the flatbreads onto the hot tray. Bake for 8 minutes until the crust is dark golden and the cheese is sizzling.
  8. Remove from the oven and let rest for 2 minutes.
  9. Shower with 1/4 cup fresh cilantro.
  10. Cut into wedges and serve immediately while the crust is at its peak.
