Ingredients:
- 2 Large Flatbreads (Naan or thin pizza crusts)
- 1 tbsp Extra Virgin Olive Oil
- 1/2 tsp Garlic Powder
- 2 cups Cooked Chicken Breast, shredded or cubed
- 1/2 cup BBQ Sauce
- 2 tbsp Red Onion, thinly sliced
- 1 cup Low-Moisture Mozzarella, shredded
- 1/2 cup Smoked Gouda, shredded
- 1/4 cup Fresh Cilantro, chopped
- 1 tbsp Sliced Jalapeños (optional)
Instructions:
- Preheat your oven to 220°C. Place your empty baking tray inside while it heats so the flatbread hits a hot surface immediately.
- In a bowl, combine 2 cups chicken with 1/2 cup BBQ sauce. Note: Coating the chicken first prevents it from drying out in the high heat.
- Brush 1 tbsp olive oil over the top of 2 large flatbreads. Sprinkle evenly with 1/2 tsp garlic powder.
- Spread 1/2 cup of the mozzarella and 1/4 cup of the gouda across the two flatbreads.
- Distribute the sauced chicken evenly over the cheese.
- Add the remaining cheeses, 2 tbsp red onion, and 1 tbsp jalapeños if using.
- Slide the flatbreads onto the hot tray. Bake for 8 minutes until the crust is dark golden and the cheese is sizzling.
- Remove from the oven and let rest for 2 minutes.
- Shower with 1/4 cup fresh cilantro.
- Cut into wedges and serve immediately while the crust is at its peak.
