Ingredients:
- 3 very ripe bananas, mashed (approx. 360g or 1 1/2 cups mashed)
- 1/4 cup (60ml) unsweetened applesauce
- 1/4 cup (60ml) honey or maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups (192g) whole wheat flour (or a mix of whole wheat and all-purpose)
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup (60g) chopped walnuts or pecans (optional)
- 1/4 cup (30g) chocolate chips (dark or semi-sweet) (optional)
Instructions:
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with liners or grease well.
- In a large bowl, mash the ripe bananas until mostly smooth.
- Add the applesauce, honey (or maple syrup), eggs, and vanilla extract to the mashed bananas. Whisk until well combined.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix! A few lumps are okay.
- Gently fold in the chopped nuts or chocolate chips (if using).
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake for 20-25 minutes, or until a toothpick inserted into the centre comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
