Ingredients:

  • 3 very ripe bananas, mashed (approx. 360g or 1 1/2 cups mashed)
  • 1/4 cup (60ml) unsweetened applesauce
  • 1/4 cup (60ml) honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (192g) whole wheat flour (or a mix of whole wheat and all-purpose)
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup (60g) chopped walnuts or pecans (optional)
  • 1/4 cup (30g) chocolate chips (dark or semi-sweet) (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with liners or grease well.
  2. In a large bowl, mash the ripe bananas until mostly smooth.
  3. Add the applesauce, honey (or maple syrup), eggs, and vanilla extract to the mashed bananas. Whisk until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix! A few lumps are okay.
  6. Gently fold in the chopped nuts or chocolate chips (if using).
  7. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  8. Bake for 20-25 minutes, or until a toothpick inserted into the centre comes out clean.
  9. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
