Ingredients:

  • 8 ounces Brie cheese, rind removed, cut into 1/2-inch cubes
  • 1/4 cup Cranberry sauce
  • 1 tablespoon Fresh rosemary, finely chopped
  • 1/4 teaspoon Black pepper, freshly ground
  • 1 package (14.1 ounces) Frozen puff pastry, thawed
  • 1 Large egg, beaten
  • Sea salt flakes, for garnish (optional)

Instructions:

  1. In a medium bowl, gently combine the cubed brie, cranberry sauce, rosemary, and black pepper.
  2. On a lightly floured surface, unfold the thawed puff pastry. Gently roll it out to slightly flatten.
  3. Use a pizza cutter or sharp knife to cut the puff pastry into 2-inch squares.
  4. Place a spoonful of the brie filling in the centre of each pastry square.
  5. Fold the pastry square diagonally to form a triangle, pressing the edges firmly to seal.
  6. Chill the assembled bites in the refrigerator for 10 minutes (optional).
  7. Brush the top of each bite with the beaten egg wash.
  8. Place the brie cheese bites on a baking sheet lined with parchment paper or a silicone baking mat. Sprinkle lightly with sea salt flakes (if using).
  9. Bake in a preheated oven at 375°F/190°C for 15-20 minutes, or until the pastry is puffed and golden brown.
  10. Let the brie cheese bites cool slightly on the baking sheet before transferring them to a serving platter. Serve warm.
