Ingredients:
- 8 ounces Brie cheese, rind removed, cut into 1/2-inch cubes
- 1/4 cup Cranberry sauce
- 1 tablespoon Fresh rosemary, finely chopped
- 1/4 teaspoon Black pepper, freshly ground
- 1 package (14.1 ounces) Frozen puff pastry, thawed
- 1 Large egg, beaten
- Sea salt flakes, for garnish (optional)
Instructions:
- In a medium bowl, gently combine the cubed brie, cranberry sauce, rosemary, and black pepper.
- On a lightly floured surface, unfold the thawed puff pastry. Gently roll it out to slightly flatten.
- Use a pizza cutter or sharp knife to cut the puff pastry into 2-inch squares.
- Place a spoonful of the brie filling in the centre of each pastry square.
- Fold the pastry square diagonally to form a triangle, pressing the edges firmly to seal.
- Chill the assembled bites in the refrigerator for 10 minutes (optional).
- Brush the top of each bite with the beaten egg wash.
- Place the brie cheese bites on a baking sheet lined with parchment paper or a silicone baking mat. Sprinkle lightly with sea salt flakes (if using).
- Bake in a preheated oven at 375°F/190°C for 15-20 minutes, or until the pastry is puffed and golden brown.
- Let the brie cheese bites cool slightly on the baking sheet before transferring them to a serving platter. Serve warm.
