Ingredients:

  • 2.5 lbs bone-in skinless chicken thighs
  • 1 tsp kosher salt
  • 0.5 tsp cracked black pepper
  • 1 cup dark brown sugar, firmly packed
  • 6 cloves fresh garlic, smashed and roughly chopped
  • 0.5 cup low-sodium soy sauce
  • 2 tbsp apple cider vinegar
  • 1 tsp red pepper flakes

Instructions:

  1. Place the bone-in, skinless chicken thighs in the bottom of a 6-quart slow cooker in a single, even layer. Season the meat directly with kosher salt and cracked black pepper.
  2. In a small mixing bowl, whisk together the dark brown sugar, smashed garlic, low-sodium soy sauce, apple cider vinegar, and red pepper flakes until the sugar is mostly dissolved and the mixture forms a dark syrup.
  3. Pour the glaze mixture over the chicken thighs, ensuring each piece is well-coated. Cover and cook on low for 6 hours until the chicken is tender and the sauce has thickened into a sticky glaze.
