Ingredients:

  • 113g Active Sourdough Starter
  • 240g All-Purpose Flour
  • 113g Unsalted Butter, cold and cubed
  • 100ml Cold Water
  • 5g Salt
  • 1 tablespoon Rosemary (optional)
  • Coarse Sea Salt, for sprinkling

Instructions:

  1. In a large bowl, combine flour and sourdough starter. Cut in the cold butter until the mixture resembles coarse crumbs.
  2. Gradually add cold water, mixing until a dough just comes together.
  3. Flatten the dough into a disc, wrap tightly in plastic wrap, and refrigerate for at least 30 minutes (or up to 2 hours).
  4. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  5. On a lightly floured surface, roll out the dough to a very thin rectangle (about 1/8 inch thick).
  6. Use a pizza cutter or sharp knife to cut the dough into desired shapes (squares, rectangles, triangles).
  7. Carefully transfer the crackers to the prepared baking sheets.
  8. Sprinkle the crackers with coarse sea salt.
  9. Bake for 15-20 minutes, or until golden brown and crisp. Watch closely to prevent burning.
