Ingredients:
- 113g Active Sourdough Starter
- 240g All-Purpose Flour
- 113g Unsalted Butter, cold and cubed
- 100ml Cold Water
- 5g Salt
- 1 tablespoon Rosemary (optional)
- Coarse Sea Salt, for sprinkling
Instructions:
- In a large bowl, combine flour and sourdough starter. Cut in the cold butter until the mixture resembles coarse crumbs.
- Gradually add cold water, mixing until a dough just comes together.
- Flatten the dough into a disc, wrap tightly in plastic wrap, and refrigerate for at least 30 minutes (or up to 2 hours).
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- On a lightly floured surface, roll out the dough to a very thin rectangle (about 1/8 inch thick).
- Use a pizza cutter or sharp knife to cut the dough into desired shapes (squares, rectangles, triangles).
- Carefully transfer the crackers to the prepared baking sheets.
- Sprinkle the crackers with coarse sea salt.
- Bake for 15-20 minutes, or until golden brown and crisp. Watch closely to prevent burning.
