Ingredients:
- 4 salmon fillets (6 oz each)
- 2 tablespoons olive oil
- 1 tablespoon paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions:
- Combine all the Cajun spice blend ingredients in a small bowl.
- Pat the salmon fillets dry with paper towels.
- Rub the olive oil onto both sides of the salmon fillets.
- Generously coat each fillet with the Cajun spice blend.
- Preheat the cast iron skillet over high heat until shimmering.
- Carefully place the salmon fillets into the hot skillet.
- Cook for about 3-4 minutes, until a crust forms.
- Flip the fillets gently using tongs; cook for another 3-4 minutes.
- Check doneness (salmon should flake easily with a fork or reach an internal temperature of 145°F / 63°C).
- Remove from heat and let rest for a minute before serving.
