Ingredients:

  • 4 salmon fillets (6 oz each)
  • 2 tablespoons olive oil
  • 1 tablespoon paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions:

  1. Combine all the Cajun spice blend ingredients in a small bowl.
  2. Pat the salmon fillets dry with paper towels.
  3. Rub the olive oil onto both sides of the salmon fillets.
  4. Generously coat each fillet with the Cajun spice blend.
  5. Preheat the cast iron skillet over high heat until shimmering.
  6. Carefully place the salmon fillets into the hot skillet.
  7. Cook for about 3-4 minutes, until a crust forms.
  8. Flip the fillets gently using tongs; cook for another 3-4 minutes.
  9. Check doneness (salmon should flake easily with a fork or reach an internal temperature of 145°F / 63°C).
  10. Remove from heat and let rest for a minute before serving.
