Instructions:
- Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
- Melt 2 Tbsp butter in a large skillet over medium heat. Add diced apples, brown sugar, and cinnamon. Cook gently for 5–7 minutes until apples begin to soften slightly. Remove from heat and set aside.
- In a large mixing bowl, combine rolled oats, flour, baking powder, salt, granulated sugar, and nutmeg. Stir well.
- In a separate bowl, whisk together eggs, milk, melted butter, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients. Stir gently until just combined. Do not overmix.
- Spread half of the oat mixture evenly into the prepared baking dish. Top with the sautéed apple mixture. Spoon the remaining oat mixture lightly over the top of the apples.
- Drizzle the 1/2 cup of caramel sauce randomly over the entire top surface. Use a knife or skewer to gently swirl the caramel into the top layer of oats.
- Bake for 40–45 minutes, or until the edges are golden brown and the center is set.
- Let the Caramel Apple Oatmeal Bake cool on a wire rack for at least 10 minutes before slicing and serving warm.
