  1. Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
  2. Melt 2 Tbsp butter in a large skillet over medium heat. Add diced apples, brown sugar, and cinnamon. Cook gently for 5–7 minutes until apples begin to soften slightly. Remove from heat and set aside.
  3. In a large mixing bowl, combine rolled oats, flour, baking powder, salt, granulated sugar, and nutmeg. Stir well.
  4. In a separate bowl, whisk together eggs, milk, melted butter, and vanilla extract until smooth.
  5. Pour the wet mixture into the dry ingredients. Stir gently until just combined. Do not overmix.
  6. Spread half of the oat mixture evenly into the prepared baking dish. Top with the sautéed apple mixture. Spoon the remaining oat mixture lightly over the top of the apples.
  7. Drizzle the 1/2 cup of caramel sauce randomly over the entire top surface. Use a knife or skewer to gently swirl the caramel into the top layer of oats.
  8. Bake for 40–45 minutes, or until the edges are golden brown and the center is set.
  9. Let the Caramel Apple Oatmeal Bake cool on a wire rack for at least 10 minutes before slicing and serving warm.
