Ingredients:
- 1 1/4 cups (150g) all-purpose flour, plus more for dusting
- 1/2 teaspoon (2g) granulated sugar
- 1/4 teaspoon (1g) salt
- 1/2 cup (113g) unsalted butter, very cold, cut into cubes
- 3-5 tablespoons (45-75ml) ice water
- 3 medium apples (such as Granny Smith, Honeycrisp, or Gala), peeled, cored, and diced (approximately 400g)
- 2 tablespoons (30g) unsalted butter
- 1/4 cup (50g) granulated sugar
- 1 teaspoon (5ml) lemon juice
- 1/2 teaspoon (1g) ground cinnamon
- 1/4 teaspoon (0.5g) ground nutmeg
- 1 tablespoon (15ml) all-purpose flour
- 1 large egg, beaten
- 1 tablespoon (15ml) milk or water
- Granulated sugar
Instructions:
- Make the Pastry Dough: Combine dry ingredients. Cut in butter until mixture resembles coarse crumbs. Gradually add ice water until dough just comes together. Flatten into a disc, wrap in plastic, and chill for at least 1 hour.
- Prepare the Apple Filling: Melt butter in a saucepan. Add apples, sugar, lemon juice, and spices. Cook until apples are tender but still hold their shape (about 8-10 minutes). Stir in flour and cook for another minute. Let cool slightly.
- Assemble the Tarts: Roll out chilled dough on a lightly floured surface. Cut out 2 1/2-inch circles. Press each circle into the muffin tin cavities.
- Fill the Tarts: Spoon apple filling evenly into each tart shell.
- Bake the Tarts: Brush the edges with egg wash (optional). Sprinkle with granulated sugar (optional). Bake at 375°F (190°C) for 20-25 minutes, or until crust is golden brown and filling is bubbly. These mini apple tarts are delicious!
- Cool and Serve: Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
