Ingredients:
- 2 cups cooked and shredded chicken
- 1 can black beans, drained and rinsed
- 1 cup frozen corn
- 1 cup salsa
- 1 cup sour cream
- 2 cups shredded cheddar cheese (reserve 1/2 cup for topping)
- 1 cup tortilla chips, crushed
- 1 tsp chili powder
- 1 tsp garlic powder
- 1 tsp cumin
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
- 1 cup shredded cheese (Mexican blend or additional cheddar)
- Optional: sliced jalapeños or additional tortilla chips for crunch
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the shredded chicken, black beans, corn, salsa, sour cream, 1.5 cups of cheese, chili powder, garlic powder, cumin, salt, and pepper.
- Gently fold the mixture until well combined.
- Transfer the mixture to a greased baking dish, spreading it evenly.
- Sprinkle the crushed tortilla chips over the top, followed by the reserved cheese.
- Bake in the preheated oven for 35-40 minutes, or until the casserole is hot and bubbly and the cheese is golden.
- Remove from the oven and let it cool for 5-10 minutes. Garnish with fresh cilantro if desired.
