Ingredients:

  • 2 cups cooked and shredded chicken
  • 1 can black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 cup salsa
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese (reserve 1/2 cup for topping)
  • 1 cup tortilla chips, crushed
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)
  • 1 cup shredded cheese (Mexican blend or additional cheddar)
  • Optional: sliced jalapeños or additional tortilla chips for crunch

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, black beans, corn, salsa, sour cream, 1.5 cups of cheese, chili powder, garlic powder, cumin, salt, and pepper.
  3. Gently fold the mixture until well combined.
  4. Transfer the mixture to a greased baking dish, spreading it evenly.
  5. Sprinkle the crushed tortilla chips over the top, followed by the reserved cheese.
  6. Bake in the preheated oven for 35-40 minutes, or until the casserole is hot and bubbly and the cheese is golden.
  7. Remove from the oven and let it cool for 5-10 minutes. Garnish with fresh cilantro if desired.
