Ingredients:
- 4 large eggs
- 1/2 cup (120g) cottage cheese, preferably low-fat
- 1 tbsp (15ml) olive oil or unsalted butter
- Salt and pepper, to taste
- 2 tbsp (5g) fresh chives, chopped (optional)
- Red pepper flakes (optional, to taste)
Instructions:
- Crack the eggs into a mixing bowl and whisk until fully combined and slightly frothy.
- Add cottage cheese, salt, pepper, and red pepper flakes to the eggs, and mix gently to distribute.
- Heat olive oil or butter in a non-stick skillet over medium heat.
- Pour the egg and cottage cheese mixture into the skillet and stir gently with a spatula, pushing the eggs from the edges towards the center. Cook until the eggs are just set but still soft (approximately 5-7 minutes).
- Stir in chopped chives, if using, and remove from heat. Serve immediately.
