Ingredients:

  • 4 large eggs
  • 1/2 cup (120g) cottage cheese, preferably low-fat
  • 1 tbsp (15ml) olive oil or unsalted butter
  • Salt and pepper, to taste
  • 2 tbsp (5g) fresh chives, chopped (optional)
  • Red pepper flakes (optional, to taste)

Instructions:

  1. Crack the eggs into a mixing bowl and whisk until fully combined and slightly frothy.
  2. Add cottage cheese, salt, pepper, and red pepper flakes to the eggs, and mix gently to distribute.
  3. Heat olive oil or butter in a non-stick skillet over medium heat.
  4. Pour the egg and cottage cheese mixture into the skillet and stir gently with a spatula, pushing the eggs from the edges towards the center. Cook until the eggs are just set but still soft (approximately 5-7 minutes).
  5. Stir in chopped chives, if using, and remove from heat. Serve immediately.
