Ingredients:
- 2 cups sweet corn kernels (fresh, frozen, or canned)
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 cup Jiffy cornbread mix (or any cornbread mix)
- 2 large eggs
- 1 tablespoon unsalted butter, melted
- 1 tablespoon sugar (optional, for added sweetness)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup additional shredded cheese (optional)
Instructions:
- Preheat the Oven: Set the oven to 350°F (175°C).
- Mix Ingredients: In a large mixing bowl, combine sweet corn, heavy cream, shredded cheese, cornbread mix, eggs, melted butter, sugar, salt, and black pepper. Use a whisk or wooden spoon to mix until well combined.
- Transfer to Baking Dish: Grease the baking dish with butter or cooking spray.
- Pour Mixture: Pour the corn mixture into the prepared baking dish, spreading evenly.
- Bake: Place in the oven and bake for 30–35 minutes or until the top is golden brown and a toothpick inserted comes out clean.
- Add Topping: If desired, sprinkle additional cheese on top and bake for 5 more minutes until melted.
- Cool & Serve: Let it cool for a few minutes before serving.
