Ingredients:
- 3 cups (270g) Old-fashioned rolled oats
- 1 cup (120g) Whole wheat flour
- 1 tbsp Ground cinnamon
- 1 tsp Baking powder
- 1/2 tsp Fine sea salt
- 2 Large eggs
- 1/2 cup (120ml) Maple syrup
- 1/4 cup (60ml) Melted coconut oil
- 1 tsp Pure vanilla extract
- 2 Medium Fuji apples (approximately 360g)
- 1/2 cup (60g) Chopped walnuts
- 1/4 cup (40g) Raisins
Instructions:
- Preheat oven to 180°C (350°F) and line your 20x20 cm pan with parchment paper, leaving an overhang on the sides.
- Dice the 360g of Fuji apples into small cubes.
- In a large mixing bowl, whisk together the eggs, maple syrup, melted coconut oil, and vanilla extract until emulsified.
- Add the dry base: Fold in the rolled oats, whole wheat flour, cinnamon, baking powder, and sea salt until no dry streaks remain.
- Incorporate the texture: Fold in the diced apple cubes, chopped walnuts, and raisins.
- Hydrate the oats: Allow the mixture to sit in the bowl for 5 minutes. This ensures the oats absorb moisture for a non-crumbly texture.
- Transfer the mixture to the prepared pan, pressing down firmly with a spatula to create an even layer.
- Bake for 25 minutes until the edges are golden brown and the center is set. Cool completely in the pan before lifting and slicing into 12 bars.
