Ingredients:

  • 3 cups (270g) Old-fashioned rolled oats
  • 1 cup (120g) Whole wheat flour
  • 1 tbsp Ground cinnamon
  • 1 tsp Baking powder
  • 1/2 tsp Fine sea salt
  • 2 Large eggs
  • 1/2 cup (120ml) Maple syrup
  • 1/4 cup (60ml) Melted coconut oil
  • 1 tsp Pure vanilla extract
  • 2 Medium Fuji apples (approximately 360g)
  • 1/2 cup (60g) Chopped walnuts
  • 1/4 cup (40g) Raisins

Instructions:

  1. Preheat oven to 180°C (350°F) and line your 20x20 cm pan with parchment paper, leaving an overhang on the sides.
  2. Dice the 360g of Fuji apples into small cubes.
  3. In a large mixing bowl, whisk together the eggs, maple syrup, melted coconut oil, and vanilla extract until emulsified.
  4. Add the dry base: Fold in the rolled oats, whole wheat flour, cinnamon, baking powder, and sea salt until no dry streaks remain.
  5. Incorporate the texture: Fold in the diced apple cubes, chopped walnuts, and raisins.
  6. Hydrate the oats: Allow the mixture to sit in the bowl for 5 minutes. This ensures the oats absorb moisture for a non-crumbly texture.
  7. Transfer the mixture to the prepared pan, pressing down firmly with a spatula to create an even layer.
  8. Bake for 25 minutes until the edges are golden brown and the center is set. Cool completely in the pan before lifting and slicing into 12 bars.
