Ingredients:

  • 1 lb ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 large egg
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 4 slices deli ham, chopped
  • 1 cup shredded Swiss cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup ketchup
  • 1 tablespoon Dijon mustard

Instructions:

  1. Preheat oven to 350°F (175°C). Grease the loaf pan or line it with parchment paper.
  2. In a large mixing bowl, combine ground chicken, breadcrumbs, milk, egg, salt, black pepper, garlic powder, and onion powder.
  3. Cover the meat mixture and refrigerate for 30 minutes to firm up.
  4. In a separate bowl, mix chopped ham, shredded Swiss cheese, and softened cream cheese until well combined.
  5. On a clean surface, shape the chilled meat mixture into a rectangular slab. Spread the ham and cheese mixture evenly over the top.
  6. Roll the meatloaf tightly, starting from one edge, and place seam-side down in the prepared loaf pan.
  7. In a small bowl, mix ketchup and Dijon mustard, then spread evenly over the top of the meatloaf.
  8. Bake in the preheated oven for approximately 1 hour, or until the internal temperature reaches 165°F (74°C).
  9. Let the meatloaf rest for 10 minutes before slicing. Serve warm.
