Instructions:
- Pat chicken breasts completely dry with paper towels. If breasts are very thick, carefully butterfly or pound them to an even 3/4-inch thickness to ensure even cooking.
- In a shallow dish, thoroughly whisk together the chipotle powder, smoked paprika, cumin, garlic powder, onion powder, oregano, brown sugar, salt, and pepper to create the spice rub.
- Brush the chicken fillets lightly with the fresh lime juice. Dredge each fillet generously in the spice mixture, pressing firmly to adhere the rub to both sides.
- Preheat the air fryer to 380°F (195°C) for 5 minutes. Lightly spray the air fryer basket with cooking oil spray.
- Place the seasoned Air Fryer Chipotle Chicken Fillets in a single layer in the air fryer basket (work in batches if necessary—do not overcrowd). Lightly spray the tops of the chicken with oil spray.
- Cook for 8 minutes at 380°F (195°C).
- Carefully flip the fillets using tongs. Spray the second side lightly with oil. Continue cooking for another 4–7 minutes, or until the internal temperature reaches 165°F (74°C).
- Remove the chicken immediately from the air fryer and let rest on a cutting board for 5 minutes before slicing and serving.
