Ingredients:
- 2 cups (250 g) All-Purpose Flour
- 1 teaspoon Baking Soda
- 1 teaspoon Baking Powder
- 1/2 teaspoon Kosher Salt
- 1 tablespoon Ground Cinnamon
- 1/2 teaspoon Ground Nutmeg
- 1/2 teaspoon Ground Ginger
- 1/4 teaspoon Ground Cloves (optional)
- 1 cup (200 g) Granulated Sugar
- 1/2 cup (100 g) packed Brown Sugar
- 1/2 cup (120 ml) Neutral Oil (Vegetable, Canola, or Sunflower)
- 2 Large Eggs, room temperature
- 1 teaspoon Vanilla Extract
- 1 cup (240 g) 100% Pumpkin Puree (not pie filling)
- 1 cup (175 g) Semi-Sweet Chocolate Chips
Instructions:
- Preheat oven to 350°F (175°C). Lightly grease a 9 x 5 inch loaf pan and line it with parchment paper, leaving an overhang on the long sides for easy removal (creating a sling).
- In the first large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves until thoroughly combined and lump-free. This process aerates the dry mixture.
- In the second large bowl, whisk the granulated sugar and brown sugar with the neutral oil until the mixture is smooth and emulsified.
- Whisk in the eggs one at a time, followed by the vanilla extract.
- Mix in the pumpkin puree just until combined. Do not overbeat this stage.
- Pour the wet mixture into the bowl containing the dry ingredients. Using a rubber spatula, fold the ingredients together gently until just combined. Stop mixing immediately when most of the flour has disappeared; a lumpy batter is key for a moist loaf.
- Toss the chocolate chips with 1 teaspoon of flour (to prevent sinking) and gently fold the floured chips into the batter.
- Scrape the batter into the prepared loaf pan, smoothing the top lightly with the spatula.
- Bake in the centre rack of the preheated oven for 60 to 65 minutes. Check for doneness after 60 minutes by inserting a long skewer into the centre; it should come out clean or with a few moist crumbs.
- Remove the loaf from the oven and let it cool in the pan for 10 minutes. Use the parchment paper sling to lift the loaf out and transfer it to a wire rack to cool completely before slicing.
