Ingredients:

  • 2 cups (250 g) All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Kosher Salt
  • 1 tablespoon Ground Cinnamon
  • 1/2 teaspoon Ground Nutmeg
  • 1/2 teaspoon Ground Ginger
  • 1/4 teaspoon Ground Cloves (optional)
  • 1 cup (200 g) Granulated Sugar
  • 1/2 cup (100 g) packed Brown Sugar
  • 1/2 cup (120 ml) Neutral Oil (Vegetable, Canola, or Sunflower)
  • 2 Large Eggs, room temperature
  • 1 teaspoon Vanilla Extract
  • 1 cup (240 g) 100% Pumpkin Puree (not pie filling)
  • 1 cup (175 g) Semi-Sweet Chocolate Chips

Instructions:

  1. Preheat oven to 350°F (175°C). Lightly grease a 9 x 5 inch loaf pan and line it with parchment paper, leaving an overhang on the long sides for easy removal (creating a sling).
  2. In the first large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves until thoroughly combined and lump-free. This process aerates the dry mixture.
  3. In the second large bowl, whisk the granulated sugar and brown sugar with the neutral oil until the mixture is smooth and emulsified.
  4. Whisk in the eggs one at a time, followed by the vanilla extract.
  5. Mix in the pumpkin puree just until combined. Do not overbeat this stage.
  6. Pour the wet mixture into the bowl containing the dry ingredients. Using a rubber spatula, fold the ingredients together gently until just combined. Stop mixing immediately when most of the flour has disappeared; a lumpy batter is key for a moist loaf.
  7. Toss the chocolate chips with 1 teaspoon of flour (to prevent sinking) and gently fold the floured chips into the batter.
  8. Scrape the batter into the prepared loaf pan, smoothing the top lightly with the spatula.
  9. Bake in the centre rack of the preheated oven for 60 to 65 minutes. Check for doneness after 60 minutes by inserting a long skewer into the centre; it should come out clean or with a few moist crumbs.
  10. Remove the loaf from the oven and let it cool in the pan for 10 minutes. Use the parchment paper sling to lift the loaf out and transfer it to a wire rack to cool completely before slicing.
