Ingredients:

  • 1 cup (227g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 2 large eggs
  • 1 teaspoon (5ml) vanilla extract
  • 2 ½ cups (300g) all-purpose flour
  • 1 teaspoon (5g) baking powder
  • ½ teaspoon (3g) salt
  • ½ cup (113g) unsalted butter, softened
  • 3 cups (360g) powdered sugar
  • 3-4 tablespoons (45-60ml) milk or cream
  • ½ teaspoon (2.5ml) vanilla extract
  • Pinch of salt
  • Christmas sprinkles, for decorating

Instructions:

  1. Preheat oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, leaving overhang on sides.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Press the dough evenly into the prepared baking pan. Cover with plastic wrap and chill in the refrigerator for at least 30 minutes.
  7. Bake for 25-30 minutes, or until edges are lightly golden and a toothpick inserted into the center comes out clean.
  8. Let the bars cool completely in the pan before frosting.
  9. While the bars are cooling, beat together softened butter and powdered sugar until smooth.
  10. Gradually add milk or cream, vanilla extract, and pinch of salt, beating until light and fluffy. Add more milk/cream as needed to reach desired consistency.
  11. Spread frosting evenly over cooled bars. Decorate generously with Christmas sprinkles.
  12. Cut into bars and serve these delicious christmas sugar cookie bars.
