Ingredients:
- 1 cup (227g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- 2 large eggs
- 1 teaspoon (5ml) vanilla extract
- 2 ½ cups (300g) all-purpose flour
- 1 teaspoon (5g) baking powder
- ½ teaspoon (3g) salt
- ½ cup (113g) unsalted butter, softened
- 3 cups (360g) powdered sugar
- 3-4 tablespoons (45-60ml) milk or cream
- ½ teaspoon (2.5ml) vanilla extract
- Pinch of salt
- Christmas sprinkles, for decorating
Instructions:
- Preheat oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, leaving overhang on sides.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Press the dough evenly into the prepared baking pan. Cover with plastic wrap and chill in the refrigerator for at least 30 minutes.
- Bake for 25-30 minutes, or until edges are lightly golden and a toothpick inserted into the center comes out clean.
- Let the bars cool completely in the pan before frosting.
- While the bars are cooling, beat together softened butter and powdered sugar until smooth.
- Gradually add milk or cream, vanilla extract, and pinch of salt, beating until light and fluffy. Add more milk/cream as needed to reach desired consistency.
- Spread frosting evenly over cooled bars. Decorate generously with Christmas sprinkles.
- Cut into bars and serve these delicious christmas sugar cookie bars.
