Ingredients:
- 1 cup (125g) all-purpose flour
- ½ cup (100g) granulated sugar
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup (115g) unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- Zest of 1 lemon
- 1 tablespoon (15g) granulated sugar (for dusting)
- Optional: Powdered sugar for frosting or glaze
Instructions:
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, sift together the flour, baking powder, and salt. Set aside.
- In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Incorporate the vanilla extract and lemon zest.
- Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- If desired, chill the batter for 30 minutes for easier handling.
- Drop spoonfuls of the batter onto the prepared baking sheet, spacing them 2 inches apart.
- Lightly dust the tops with granulated sugar before baking.
- Bake for 15-20 minutes until the edges are golden brown. Cakes should spring back when gently touched.
- Allow to cool on a wire rack before serving.
