Ingredients:

  • 1 cup (125g) all-purpose flour
  • ½ cup (100g) granulated sugar
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup (115g) unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 1 tablespoon (15g) granulated sugar (for dusting)
  • Optional: Powdered sugar for frosting or glaze

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, sift together the flour, baking powder, and salt. Set aside.
  3. In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Incorporate the vanilla extract and lemon zest.
  5. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  6. If desired, chill the batter for 30 minutes for easier handling.
  7. Drop spoonfuls of the batter onto the prepared baking sheet, spacing them 2 inches apart.
  8. Lightly dust the tops with granulated sugar before baking.
  9. Bake for 15-20 minutes until the edges are golden brown. Cakes should spring back when gently touched.
  10. Allow to cool on a wire rack before serving.
