Ingredients:
- 4 large eggs
- 2/3 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- Powdered sugar, for dusting
- Cocoa powder or chocolate sauce (optional, for serving)
Instructions:
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a mixing bowl, whisk together egg yolks and granulated sugar until pale and frothy (about 5 minutes). Add vanilla extract and mix until combined.
- In a separate bowl, beat egg whites until soft peaks form; gradually add salt and whisk until stiff peaks form.
- Gently fold one-third of the egg whites into the yolk mixture to lighten it, then gradually fold in the remaining egg whites until no streaks remain.
- Sift the flour over the batter and gently fold until fully combined.
- Transfer the batter to a piping bag and pipe 3-inch logs onto the prepared sheets, leaving space between them. Dust with powdered sugar before baking.
- Bake in the preheated oven for 12-15 minutes, or until lightly golden and springy to the touch.
- Let the lady fingers cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
