Ingredients:

  • 4 large eggs
  • 2/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • Powdered sugar, for dusting
  • Cocoa powder or chocolate sauce (optional, for serving)

Instructions:

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, whisk together egg yolks and granulated sugar until pale and frothy (about 5 minutes). Add vanilla extract and mix until combined.
  3. In a separate bowl, beat egg whites until soft peaks form; gradually add salt and whisk until stiff peaks form.
  4. Gently fold one-third of the egg whites into the yolk mixture to lighten it, then gradually fold in the remaining egg whites until no streaks remain.
  5. Sift the flour over the batter and gently fold until fully combined.
  6. Transfer the batter to a piping bag and pipe 3-inch logs onto the prepared sheets, leaving space between them. Dust with powdered sugar before baking.
  7. Bake in the preheated oven for 12-15 minutes, or until lightly golden and springy to the touch.
  8. Let the lady fingers cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
