Ingredients:

  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 680g)
  • 1 cup (120g) all-purpose flour
  • 2 large eggs
  • 1 cup (100g) breadcrumbs (preferably Italian seasoned)
  • 1 cup (100g) grated Parmesan cheese
  • 2 teaspoons dried oregano
  • Salt and pepper to taste
  • 2 cups (500g) marinara sauce
  • 1 cup (100g) shredded mozzarella cheese
  • Fresh basil leaves for garnish (optional)

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Flatten chicken breasts to an even thickness using a meat mallet. Season with salt and pepper.
  3. Set up the breading station: Place flour in the first shallow dish. Whisk eggs in the second dish. Combine breadcrumbs, grated Parmesan, oregano, salt, and pepper in the third dish.
  4. Dredge each chicken breast in flour, dip in eggs, and coat in breadcrumb mixture.
  5. Arrange breaded chicken in the baking dish.
  6. Bake for 15-20 minutes or until chicken is golden and cooked through (internal temperature reaches 165°F / 74°C).
  7. Remove from oven and spoon marinara sauce over each piece.
  8. Top with shredded mozzarella cheese.
  9. Return to the oven and bake for an additional 5-7 minutes until cheese is bubbly and slightly browned.
  10. Garnish with fresh basil before serving.
