Ingredients:
- 4 boneless, skinless chicken breasts (about 1.5 pounds / 680g)
- 1 cup (120g) all-purpose flour
- 2 large eggs
- 1 cup (100g) breadcrumbs (preferably Italian seasoned)
- 1 cup (100g) grated Parmesan cheese
- 2 teaspoons dried oregano
- Salt and pepper to taste
- 2 cups (500g) marinara sauce
- 1 cup (100g) shredded mozzarella cheese
- Fresh basil leaves for garnish (optional)
Instructions:
- Preheat the oven to 425°F (220°C).
- Flatten chicken breasts to an even thickness using a meat mallet. Season with salt and pepper.
- Set up the breading station: Place flour in the first shallow dish. Whisk eggs in the second dish. Combine breadcrumbs, grated Parmesan, oregano, salt, and pepper in the third dish.
- Dredge each chicken breast in flour, dip in eggs, and coat in breadcrumb mixture.
- Arrange breaded chicken in the baking dish.
- Bake for 15-20 minutes or until chicken is golden and cooked through (internal temperature reaches 165°F / 74°C).
- Remove from oven and spoon marinara sauce over each piece.
- Top with shredded mozzarella cheese.
- Return to the oven and bake for an additional 5-7 minutes until cheese is bubbly and slightly browned.
- Garnish with fresh basil before serving.
