Ingredients:

  • 1 cup creamy peanut butter (unsweetened is best)
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the peanut butter and granulated sugar. Use an electric mixer or whisk until well blended.
  3. Add the egg, vanilla extract, baking soda, and salt to the mixture. Mix until smooth and fully combined.
  4. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the baking sheet, spacing them about 2 inches apart.
  5. Flatten each ball slightly with the back of a fork, creating a crisscross pattern.
  6. Bake in the preheated oven for 10-12 minutes, or until edges are lightly golden.
  7. Remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
