Ingredients:
- 1 cup creamy peanut butter (unsweetened is best)
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ½ teaspoon baking soda
- ¼ teaspoon salt
Instructions:
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the peanut butter and granulated sugar. Use an electric mixer or whisk until well blended.
- Add the egg, vanilla extract, baking soda, and salt to the mixture. Mix until smooth and fully combined.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the baking sheet, spacing them about 2 inches apart.
- Flatten each ball slightly with the back of a fork, creating a crisscross pattern.
- Bake in the preheated oven for 10-12 minutes, or until edges are lightly golden.
- Remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
