  • 1 cup (175g) semi-sweet chocolate chips (60% cacao)
  • 0.5 cup (128g) creamy peanut butter
  • 0.25 cup (57g) unsalted butter, cubed
  • 1 tsp (5ml) pure vanilla extract
  • 0.25 tsp fine sea salt
  • 2 cups (240g) powdered sugar, sifted

Instructions:

  1. In a medium microwave-safe glass bowl, combine the semi-sweet chocolate chips, creamy peanut butter, and cubed unsalted butter.
  2. Microwave the mixture in 30-second intervals, stirring vigorously with a spatula between each burst, until the texture is glossy and completely smooth.
  3. Remove from heat and stir in the pure vanilla extract and fine sea salt until fully incorporated.
  4. Place the Chex cereal in a large 6-quart mixing bowl. Pour the warm chocolate mixture over the cereal and use a folding motion to coat every piece without crushing the cereal.
  5. The Resting Window: Allow the coated cereal to sit for 3 minutes. This allows the chocolate to become tacky, ensuring the powdered sugar adheres in a thick layer rather than dissolving.
  6. Transfer the mixture to a large 2-gallon Ziploc bag containing the sifted powdered sugar. Seal and shake vigorously until every piece is snowy white and separated.
  7. Spread the puppy chow onto a parchment-lined baking sheet to cool completely and set before serving.
