- 0.5 cup (128g) creamy peanut butter
- 0.25 cup (57g) unsalted butter, cubed
- 1 tsp (5ml) pure vanilla extract
- 0.25 tsp fine sea salt
- 2 cups (240g) powdered sugar, sifted
Instructions:
- In a medium microwave-safe glass bowl, combine the semi-sweet chocolate chips, creamy peanut butter, and cubed unsalted butter.
- Microwave the mixture in 30-second intervals, stirring vigorously with a spatula between each burst, until the texture is glossy and completely smooth.
- Remove from heat and stir in the pure vanilla extract and fine sea salt until fully incorporated.
- Place the Chex cereal in a large 6-quart mixing bowl. Pour the warm chocolate mixture over the cereal and use a folding motion to coat every piece without crushing the cereal.
- The Resting Window: Allow the coated cereal to sit for 3 minutes. This allows the chocolate to become tacky, ensuring the powdered sugar adheres in a thick layer rather than dissolving.
- Transfer the mixture to a large 2-gallon Ziploc bag containing the sifted powdered sugar. Seal and shake vigorously until every piece is snowy white and separated.
