Ingredients:
- 1.5 pounds (680g) new potatoes, scrubbed and halved
- 1 teaspoon kosher salt
- ½ cup (120ml) sour cream
- ¼ cup (60ml) mayonnaise
- ¼ cup (30g) cornichons, finely chopped
- 1 tablespoon capers, rinsed and chopped
- 1 teaspoon Dijon mustard
- 1 tablespoon fresh dill, chopped
- Freshly cracked black pepper, to taste
Instructions:
- Place halved new potatoes in a large pot and cover with water. Add kosher salt to the water.
- Bring to a boil over high heat. Once boiling, reduce heat to medium and simmer for 15-20 minutes until tender. Drain and let cool slightly.
- In a mixing bowl, combine sour cream, mayonnaise, cornichons, capers, Dijon mustard, dill, and pepper. Whisk until smooth.
- Gently toss the warm potatoes with the creamy cornichon sauce in a serving dish. Optionally, garnish with additional dill before serving.
