Ingredients:

  • 1.5 pounds (680g) new potatoes, scrubbed and halved
  • 1 teaspoon kosher salt
  • ½ cup (120ml) sour cream
  • ¼ cup (60ml) mayonnaise
  • ¼ cup (30g) cornichons, finely chopped
  • 1 tablespoon capers, rinsed and chopped
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh dill, chopped
  • Freshly cracked black pepper, to taste

Instructions:

  1. Place halved new potatoes in a large pot and cover with water. Add kosher salt to the water.
  2. Bring to a boil over high heat. Once boiling, reduce heat to medium and simmer for 15-20 minutes until tender. Drain and let cool slightly.
  3. In a mixing bowl, combine sour cream, mayonnaise, cornichons, capers, Dijon mustard, dill, and pepper. Whisk until smooth.
  4. Gently toss the warm potatoes with the creamy cornichon sauce in a serving dish. Optionally, garnish with additional dill before serving.
