Ingredients:

  • 1 cup rolled oats (90g)
  • 1 ½ cups unsweetened almond milk (360ml)
  • ¼ cup Greek yogurt (60g) (optional)
  • 1 tablespoon maple syrup or honey (optional)
  • 1 medium apple, diced (about 150g)
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg (optional)
  • A sprinkle of chopped nuts (walnuts or pecans)
  • Additional apple slices for topping

Instructions:

  1. In a mixing bowl, combine rolled oats, almond milk, and Greek yogurt (if using).
  2. Fold in the diced apple, cinnamon, and nutmeg (if using).
  3. Taste the mixture and sweeten with maple syrup or honey if desired.
  4. Divide the mixture into separate airtight containers or jars.
  5. Seal containers and refrigerate overnight, or for at least 6 hours.
  6. In the morning, stir well and top with nuts and additional apple slices.
