Ingredients:
- 1 tablespoon olive oil (15ml)
- 1 pound Italian sausage (450g), sweet or hot, casings removed
- 1 medium yellow onion (approx. 150g), finely chopped
- 2 cloves garlic, minced (approx. 6g)
- 1 teaspoon dried Italian seasoning (5ml)
- ½ teaspoon red pepper flakes (2.5ml), optional
- 1 (28 ounce) can crushed tomatoes (794g)
- 6 cups chicken broth (1.4L)
- 1 (9 ounce) package refrigerated cheese tortellini (255g)
- 5 ounces fresh spinach (140g), roughly chopped
- ¼ cup grated Parmesan cheese (25g), for serving
- Salt and pepper to taste
Instructions:
- Heat olive oil in a large pot over medium-high heat. Crumble sausage and cook until browned and cooked through, breaking it up with a spoon. Drain off any excess grease.
- Add chopped onion and garlic to the pot. Sauté until softened and fragrant, about 3-5 minutes.
- Stir in Italian seasoning and red pepper flakes (if using). Add crushed tomatoes and chicken broth. Bring to a simmer.
- Add tortellini to the simmering soup. Cook according to package directions, or until tender, about 5-7 minutes.
- Stir in spinach until wilted, about 1-2 minutes.
- Season with salt and pepper to taste. Ladle into bowls and garnish with Parmesan cheese. Serve immediately.
