Ingredients:

  • 6 medium apples (Granny Smith, Honeycrisp, or Fuji), peeled, cored, and sliced ¼ inch thick (approximately 900g)
  • 4 tablespoons unsalted butter (57g)
  • ½ cup granulated sugar (100g)
  • ½ cup packed light brown sugar (100g)
  • ½ teaspoon ground cinnamon (2.5ml)
  • ¼ teaspoon ground nutmeg (1.25ml)
  • ¼ cup water (60ml)
  • 1 tablespoon lemon juice (15ml)

Instructions:

  1. Melt butter in the large skillet over medium heat.
  2. Stir in granulated sugar, brown sugar, cinnamon, and nutmeg. Cook until the sugar begins to melt and caramelize slightly.
  3. Add apple slices to the skillet and toss to coat with the sugar mixture.
  4. Pour in water and lemon juice. Bring the mixture to a simmer, then reduce heat to low.
  5. Cover the skillet and cook for 15-20 minutes, or until the apples are tender but still hold their shape. Stir occasionally to prevent sticking. Check doneness by piercing with a fork – they should be soft, not mushy.
  6. If the sauce is too thin, remove the lid and cook for a few more minutes to allow the excess liquid to evaporate. The sauce should lightly coat the apples.
  7. Serve warm.
