- 1 cup (90g) Old Fashioned Rolled Oats
- 2 tbsp (24g) Black or White Chia Seeds
- 1/8 tsp Fine Sea Salt
- 1 cup (240ml) Unsweetened Almond Milk
- 1/2 cup (115g) Plain Greek Yogurt
- 1 tbsp (15ml) Pure Maple Syrup
- 1/2 tsp Pure Vanilla Bean Paste
- 1/2 cup (75g) Fresh High-Bush Blueberries
- 1 tsp Fresh Lemon Zest
Instructions:
- In a small mixing bowl, whisk together the almond milk, Greek yogurt, maple syrup, vanilla bean paste, and lemon zest until the emulsion is completely smooth.
- Gradually fold in the rolled oats, chia seeds, and sea salt. Stir vigorously for 30 seconds to ensure the chia seeds are evenly suspended and won't clump.
- Divide exactly half of the oat mixture between two 12-oz wide-mouth glass jars.
- Add a centralized layer of fresh blueberries to each jar to protect the fruit's structural integrity.
- Top with the remaining oat mixture, seal the lids tightly, and refrigerate for a minimum of 6 hours or overnight for optimal cold-softening.
