Ingredients:

  • 1 cup (90g) Old Fashioned Rolled Oats
  • 2 tbsp (24g) Black or White Chia Seeds
  • 1/8 tsp Fine Sea Salt
  • 1 cup (240ml) Unsweetened Almond Milk
  • 1/2 cup (115g) Plain Greek Yogurt
  • 1 tbsp (15ml) Pure Maple Syrup
  • 1/2 tsp Pure Vanilla Bean Paste
  • 1/2 cup (75g) Fresh High-Bush Blueberries
  • 1 tsp Fresh Lemon Zest

Instructions:

  1. In a small mixing bowl, whisk together the almond milk, Greek yogurt, maple syrup, vanilla bean paste, and lemon zest until the emulsion is completely smooth.
  2. Gradually fold in the rolled oats, chia seeds, and sea salt. Stir vigorously for 30 seconds to ensure the chia seeds are evenly suspended and won't clump.
  3. Divide exactly half of the oat mixture between two 12-oz wide-mouth glass jars.
  4. Add a centralized layer of fresh blueberries to each jar to protect the fruit's structural integrity.
  5. Top with the remaining oat mixture, seal the lids tightly, and refrigerate for a minimum of 6 hours or overnight for optimal cold-softening.
