Ingredients:
- 1 pound (450g) egg noodles, wide
- 4 tablespoons (57g) unsalted butter
- 1/2 cup (60g) all-purpose flour
- 4 cups (950ml) whole milk
- 1 teaspoon dried mustard
- 1/2 teaspoon salt (plus more to taste)
- 1/4 teaspoon black pepper (plus more to taste)
- 2 cups (250g) cooked ham, cubed
- 2 cups (225g) shredded cheddar cheese, divided (reserve 1 cup for topping)
- 1/2 cup (60g) frozen peas, thawed
- 1/4 cup chopped fresh parsley for garnish (optional)
Instructions:
- Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- Cook egg noodles according to package directions until al dente. Drain well and set aside.
- Melt butter in a large saucepan over medium heat. Whisk in flour until smooth. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly.
- Stir in dried mustard, salt, and pepper. Cook, stirring, until the sauce has thickened slightly (about 2-3 minutes).
- Remove the sauce from heat. Stir in the cooked noodles, ham, 1 cup of cheddar cheese, and peas. Mix well.
- Pour the mixture into the prepared baking dish.
- Sprinkle the remaining 1 cup of cheddar cheese over the top.
- Bake for 25-30 minutes, or until golden brown and bubbly.
- Let stand for a few minutes before serving. Garnish with parsley (optional).
