Ingredients:

  • 1 pound (450g) egg noodles, wide
  • 4 tablespoons (57g) unsalted butter
  • 1/2 cup (60g) all-purpose flour
  • 4 cups (950ml) whole milk
  • 1 teaspoon dried mustard
  • 1/2 teaspoon salt (plus more to taste)
  • 1/4 teaspoon black pepper (plus more to taste)
  • 2 cups (250g) cooked ham, cubed
  • 2 cups (225g) shredded cheddar cheese, divided (reserve 1 cup for topping)
  • 1/2 cup (60g) frozen peas, thawed
  • 1/4 cup chopped fresh parsley for garnish (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. Cook egg noodles according to package directions until al dente. Drain well and set aside.
  3. Melt butter in a large saucepan over medium heat. Whisk in flour until smooth. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly.
  4. Stir in dried mustard, salt, and pepper. Cook, stirring, until the sauce has thickened slightly (about 2-3 minutes).
  5. Remove the sauce from heat. Stir in the cooked noodles, ham, 1 cup of cheddar cheese, and peas. Mix well.
  6. Pour the mixture into the prepared baking dish.
  7. Sprinkle the remaining 1 cup of cheddar cheese over the top.
  8. Bake for 25-30 minutes, or until golden brown and bubbly.
  9. Let stand for a few minutes before serving. Garnish with parsley (optional).
