Instructions:
- Place the mint leaves and sugar into the bottom of a sturdy highball glass.
- Gently press and twist the mint leaves 3-4 times using a muddler or the back of a heavy spoon. The goal is to release the essential oils, not shred the leaves.
- Add the fresh lime juice and the cream of coconut to the glass. Stir briefly to help the sugar begin dissolving.
- Pour in the white rum.
- Fill the glass completely with ice (crushed ice works best for this style of drink).
- Top the mixture with chilled club soda. Gently stir the entire contents from the bottom to the top just once or twice to combine everything without losing the carbonation.
- Garnish by placing a lime wheel on the rim and a fresh mint sprig that has been gently slapped between your palms to release its aroma. Serve immediately.
