  1. Place the mint leaves and sugar into the bottom of a sturdy highball glass.
  2. Gently press and twist the mint leaves 3-4 times using a muddler or the back of a heavy spoon. The goal is to release the essential oils, not shred the leaves.
  3. Add the fresh lime juice and the cream of coconut to the glass. Stir briefly to help the sugar begin dissolving.
  4. Pour in the white rum.
  5. Fill the glass completely with ice (crushed ice works best for this style of drink).
  6. Top the mixture with chilled club soda. Gently stir the entire contents from the bottom to the top just once or twice to combine everything without losing the carbonation.
  7. Garnish by placing a lime wheel on the rim and a fresh mint sprig that has been gently slapped between your palms to release its aroma. Serve immediately.
