Ingredients:

  • 2 cups (500g) Greek yogurt (plain, full-fat or low-fat)
  • 1 medium cucumber, finely grated
  • 1 small red bell pepper, finely diced
  • 1 small carrot, grated
  • 2 green onions, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons lemon juice (about 1 lemon)
  • 1 teaspoon dried dill (or 1 tablespoon fresh dill, chopped)
  • Salt and pepper, to taste
  • Assorted fresh vegetables (e.g., celery sticks, cherry tomatoes, bell pepper strips)
  • Pita chips or pita bread (optional)

Instructions:

  1. Grate the cucumber and carrot, and finely dice the red bell pepper.
  2. In a mixing bowl, add the Greek yogurt, lemon juice, and dried dill.
  3. Gently fold in the grated cucumber, carrot, chopped red bell pepper, minced garlic, and green onions.
  4. Season the mixture with salt and pepper. Adjust flavors as needed.
  5. Cover the dip and refrigerate for at least 30 minutes to let the flavors meld.
  6. Transfer to a serving bowl and enjoy with assorted fresh vegetables and pita chips.
