Ingredients:

  • 1 pound (450g) fresh spinach, washed and chopped
  • 2 tablespoons (30ml) olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup (240ml) heavy cream
  • 1 cup (240g) ricotta cheese
  • 1 cup (100g) grated mozzarella cheese
  • 1 cup (100g) grated Parmesan cheese
  • 3 large eggs
  • 1/2 teaspoon (2g) salt
  • 1/4 teaspoon (1g) black pepper
  • 1/4 teaspoon (1g) ground nutmeg
  • 1/2 cup (50g) breadcrumbs (optional for topping)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes). Stir in the minced garlic and cook until fragrant (about 1 minute).
  3. Add the chopped spinach to the skillet and cook until wilted (about 3-4 minutes).
  4. In a mixing bowl, combine heavy cream, ricotta cheese, half of the mozzarella, half of the Parmesan, and eggs. Season with salt, pepper, and nutmeg. Whisk until well combined.
  5. Fold the sautéed spinach mixture into the cheese mixture.
  6. Transfer the mixture into the baking dish, spreading it evenly.
  7. Sprinkle the remaining mozzarella and Parmesan cheeses on top.
  8. (Optional) For a crispy topping, sprinkle breadcrumbs over the cheese.
  9. Bake in the preheated oven for 25-30 minutes or until golden and bubbly.
  10. Let it cool for 5-10 minutes before slicing and serving.
