Ingredients:
- 1 pound (450g) fresh spinach, washed and chopped
- 2 tablespoons (30ml) olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 cup (240ml) heavy cream
- 1 cup (240g) ricotta cheese
- 1 cup (100g) grated mozzarella cheese
- 1 cup (100g) grated Parmesan cheese
- 3 large eggs
- 1/2 teaspoon (2g) salt
- 1/4 teaspoon (1g) black pepper
- 1/4 teaspoon (1g) ground nutmeg
- 1/2 cup (50g) breadcrumbs (optional for topping)
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes). Stir in the minced garlic and cook until fragrant (about 1 minute).
- Add the chopped spinach to the skillet and cook until wilted (about 3-4 minutes).
- In a mixing bowl, combine heavy cream, ricotta cheese, half of the mozzarella, half of the Parmesan, and eggs. Season with salt, pepper, and nutmeg. Whisk until well combined.
- Fold the sautéed spinach mixture into the cheese mixture.
- Transfer the mixture into the baking dish, spreading it evenly.
- Sprinkle the remaining mozzarella and Parmesan cheeses on top.
- (Optional) For a crispy topping, sprinkle breadcrumbs over the cheese.
- Bake in the preheated oven for 25-30 minutes or until golden and bubbly.
- Let it cool for 5-10 minutes before slicing and serving.
