  • 1 lb (450 g) lump crab meat, picked over for shells
  • 1 cup (150 g) diced cucumber
  • ½ cup (75 g) chopped bell pepper (red or yellow)
  • ¼ cup (30 g) finely diced red onion
  • 2 tablespoons chopped fresh chives or parsley
  • ½ cup (120 ml) mayonnaise
  • 2 tablespoons (30 ml) lemon juice (about 1 lemon)
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions:

  1. Gather all ingredients and chop vegetables as specified.
  2. In a small bowl, whisk together the mayonnaise, lemon juice, and Dijon mustard until smooth. Season with salt and pepper to taste.
  3. In a large mixing bowl, gently fold together the crab meat, cucumber, bell pepper, red onion, and chives or parsley.
  4. Pour the dressing over the crab mixture and gently stir until well combined, being careful not to break up the crab too much.
  5. Taste the salad and adjust seasoning, if needed.
