- 1 cup (150 g) diced cucumber
- ½ cup (75 g) chopped bell pepper (red or yellow)
- ¼ cup (30 g) finely diced red onion
- 2 tablespoons chopped fresh chives or parsley
- ½ cup (120 ml) mayonnaise
- 2 tablespoons (30 ml) lemon juice (about 1 lemon)
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions:
- Gather all ingredients and chop vegetables as specified.
- In a small bowl, whisk together the mayonnaise, lemon juice, and Dijon mustard until smooth. Season with salt and pepper to taste.
- In a large mixing bowl, gently fold together the crab meat, cucumber, bell pepper, red onion, and chives or parsley.
- Pour the dressing over the crab mixture and gently stir until well combined, being careful not to break up the crab too much.
