Ingredients:
- 2 (6-ounce/170g) cod fillets, skinless and boneless
- 1 tablespoon olive oil (15ml)
- 1 teaspoon lemon juice (5ml)
- ½ teaspoon salt (2.5ml)
- ¼ teaspoon black pepper (1.25ml)
- ½ cup panko breadcrumbs (50g)
- ¼ cup all-purpose flour (30g)
- 1 large egg, lightly beaten (approx. 50g)
- 1 teaspoon paprika (5ml)
- ½ teaspoon garlic powder (2.5ml)
- ¼ teaspoon onion powder (1.25ml)
- ¼ teaspoon dried thyme (1.25ml)
- Pinch of cayenne pepper (optional)
Instructions:
- Pat cod fillets dry with paper towels. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Brush mixture evenly over both sides of the cod fillets.
- Place flour in one shallow dish, beaten egg in a second, and panko breadcrumbs mixed with paprika, garlic powder, onion powder, thyme, and cayenne (if using) in a third.
- Dredge each cod fillet in the flour, shaking off excess. Then, dip in the beaten egg, allowing excess to drip off. Finally, coat thoroughly in the panko breadcrumb mixture, pressing gently to adhere.
- Preheat your air fryer to 400°F (200°C) for 3-5 minutes if your model requires preheating.
- Lightly spray the air fryer basket with cooking spray. Place breaded cod fillets in the basket, ensuring they are not overcrowded. Cook for 10-12 minutes, or until golden brown and the fish is cooked through and flakes easily with a fork, or until the internal temperature reaches 145°F (63°C). Flip halfway through cooking to make perfect air fried cod.
- Remove cod from the air fryer and serve immediately.
